This recipe is for a dinner that hits all of those requirements. It is a rich and delicious spin on the classic combination of lemon and chicken, ideal for bringing these family flavors into the colder winter months. Since it contains potatoes right in the casserole, you do not need to add another starch to the plate. Serve the bake with a fresh salad or a side of vegetables such as green beans or spinach and a fruit salad for dessert to create a complete, well-balanced meal that features all of the food groups.

 

What You Will Need

• 1 lemon

• Fresh parsley and thyme

• Salt

• Fresh ground black pepper

• 1.5 pounds of boneless, skinless chicken breast

• 1 small white onion

• 2 cloves of garlic

• 1.5 pound of Yukon gold potatoes

• 1/2 cup of milk

• 2.5 cups of condensed cream of mushroom or chicken soup

• A potato peeler

• A sharp knife

• A cutting board

• A saucepan

• A large mixing bowl

• A 9 by 13 inch baking dish

• Aluminum foil

 

What to Do

• Using the sharp knife, peel and cut the white onion, chopping it into small pieces

• Set the onion aside

• Mince the garlic and set aside with the onion

• Using the potato peeler, peel the potatoes

• Thinly, no more than 1/8 inch thick, slice the potatoes

• Slice and halve the lemon into small half coins

• Preheat the oven to 425 degrees F

• Place the saucepan over medium-high heat

• Add the condensed soup and milk to the saucepan

• Whisk to combine

• Allow to heat until simmering while stirring frequently

• When the soup mix has reached a simmer, remove from the heat and set aside

• In another large mixing bowl, add the onion, potatoes, garlic and chicken

• Pour the soup mix into the mixing bowl

• Add a generous pinch of the pepper and salt

• Gently toss to combine until the potato and the chicken are all evenly coated

• Transfer the mixture from the mixing bowl to the 9 by 13 inch baking dish

• Tuck in the lemon wedges throughout the baking dish randomly

• Cover the pan with aluminum foil

• Bake the covered pan for 1 hour

• Check to see if the potatoes are tender, if not cook in five minute increments until they are

• Carefully remove the foil

• Turn the oven to broil

• Broil the casserole for 2 to 3 minutes

• Once the casserole has crisped on top, remove it so that it does not burn

• Remove the pan from the oven and allow to cool slightly

• Serve while still warm
